8 Slices Bacon - cut in 1/2
30 Oz. Frozen Thawed Shredded Hash Brown Potatoes
1 TBLS Italian Seasoning
1/2 tsp Granulated Garlic
2 tsp Salt
1 Pinch Red Pepper Flakes
1 1/2 Cups Shredded Mozzarella Cheese
1 Cup Shredded Sharp Cheddar Cheese
8 Large Eggs
3 TBLS Chopped Chives (garnish) or 3 TBLS Sliced Scalions

Preheat oven to 400 degrees. Line baking sheet with parchment paper. Place bacon in a single layer on baking sheet & bake, turning once, until lightly crisp, about 10 mins. Remove bacon to a paper towel lined plate & set aside.

Place potatoes, Italian seasoning, granulated garlic, salt & pepper flakes in a large bowl & use tongs or a spoon to combine, then spread into an even layer on the baking sheet. Bake until potatoes are starting to turn golden, about 20 mins.

Remove baking sheet from oven & sprinkle mozzarella & cheddar cheese over the top. Use a spoon to create 8 wells. Break eggs into the wells & season with salt & pepper. Place the bacon slices over the potatoes & bake until eggs are set & bacon is completely crisp, about 10-15 mins more.

Garnish with chopped chives or sliced scallions to serve.
