1 cup chopped dates
1 tsp. baking soda
1 cup boiling water
½ cup margarine
1 cup white sugar
1 egg
1 tsp. vanilla
1½ cups flour
½ tsp. salt
1 cup peeled and diced apple/pineapple
4 tbsp. margarine
½ cup brown sugar
4 tbsp. milk
1 cup shredded coconut

Directions:

Combine dates, baking soda and water and let cool. Cream shortening and sugar. Add egg and vanilla. Mix flour and salt, add alternately to creamed shortening with fruit mixture. Pour into 11x7 inch pan. Bake at 350º for 50 minutes. Cook remaining ingredients over low heat until butter and sugar are melted. Spread over cooked cake and return to oven until topping is golden brown.
