8 Tablespoons butter (1 stick)
1/4 tsp allspice
5 apples peeled, cored, and slice into 1/4 inch wedges
(2 Granny Smith and 3 golden delicious or other of your choice)
12 tablespoons sugar
1/2 tsp salt
2 tablespoons brandy
2/3 cus Gluten Free Mama’s Coconut blend flour
1/2 tsp xanthan gum
1 tsp baking powder
2 large eggs
2 tsp vanilla

Directions:

Heat the oven to 375 degrees. Coat a 9- inch springform pan with cooking spray, dust evenly with flour. In a 12- inch skillet over medium heat, melt the butter and cook until lightly browned. Pour into dish and add the allspice to the melted butter.

Add the apples and 2 tablespoons of sugar and the salt to the pan, add another tablespoon of butter if necessary to cook the apples. Cook, stirring occasionally until all the moisture released by the apples has cooked out. Add the brandy and cook until evaporated. Transfer to large plate and spread out, cool in the refrigerator for 20 minutes.

In a small bowl, whisk together the flour, xanthan gum, and baking powder. In a large bowl whisk together the eggs, vanilla, and 9 tablespoons of sugar. Gradually whisk in the browned butter. Add the flour mixture and stir with the rubber spatula until smooth. The batter will be very thick. Add the cold apples and fold in until evenly coated with batter, transfer to the prepared pan, spread in an even layer and sprinkle with the remaining 1 tablespoon of sugar.

Bake until deeply Brown, 35 to 40 minutes. Let cool completely in the pan on a wire rack about two hours. Running ninth around the inside of the pan and remove the sides before slicing.
