one large eggplant or multiple smaller
egg (or vegan egg substitute)
Italian bread crumbs
all purpose flour
mozzarella cheese (or vegan alternative)
parmesan cheese (or vegan alternative)
vegetable oil
salt and pepper
Marinara sauce of your choosing or homemade

Directions:
Peel eggplant and slice into thin rounds (try for 1/4 inch thickness). Salt the slices and place slices on a plate layered between paper towels for 15 minutes to release extra water. Heat oil in frying pan. Cover eggplant slices in flour, then egg wash, then bread crumbs and then fry in oil, turning over when lightly browned. Let slices dry on paper towel. After all slices are fried, put a layer of sauce on bottom of a 9" by 13" pan. Then add layer of eggplant, and a layer of mozzarella cheese. Repeat layers two to three times. Top with a layer of mozzarella cheese and parmesan cheese. Cover with foil and bake at 350 degrees for 45 minutes. Uncover and bake for an additional 5-10 minutes. Best served with pasta and salad :)
