1 7½ oz., can minced clams
Cold water
1 egg
1 4-oz. package potatoe pancake mix
about 2 tbsp. vegetable oil

Directions:
Directions:
Drain liquid from clams; reserve.
Add cold water to liquid to make ¾ cup.
Combine clam liquid, clams and egg in a medium sized bowl.
Add potato pancake mix and stir to blend well. Let stand 10 minutes.
Heat oil in an electric skillet to 375º. Drop a few tbsp. of the batter on the skillet at a time.
Cook fritters on one side about 2 minutes, or until lightly browned. Turn and cook 2 minutes longer, or until golden brown. Repeat with remaining batter, adding a little more oil if necessary. Makes about 12 fritters.
