24 fresh whole white mushrooms
2 tbsp balsamic vinaigrette dressing
4 slices bacon
1 1/2 tsp olive oil
1/2 cup chopped red onion
1/3 cup shredded cheese (any kind)
1/3 cup garlic spreadable cheese
1/2 tsp Dijon mustard
2 tbsp bread crumbs
2 tsp chopped fresh parsley

Directions:
Heat oven to 350º F Remove stems from mushrooms, reserve caps. Toss mushroom caps with vinaigrette, put in a pan and bake for 10 min, let it cool, drain. Cook bacon,crumble it. In a skillet cook oil, onions and chopped mushroom stems, cook until onion is tender. In a bowl, stir onion mixture, bacon, cheese and mustard until well blended. Spoon mixture into mushroom caps, place filled sides up in a pan. In a small bowl, mix bread crumbs, oil,stir in parsley. Sprinkle bread crumb mixture over filled mushroom caps. Bake 10-15 min.Serve warm.

I guess I didn't read it properly the first time,so I cooked the stems in vinegar and put the mixture later in uncooked mushroom caps.It was still pretty good.
