1 medium white onion, cut into 1/4" rounds
Salt
4 medium Yukon Gold potatoes, sliced 1/4" thick
8 skinless chicken thighs
1 cup loosely packed cilatro leaves
8 - 12 medium husked tomatillos, rinsed & sliced 1/4" thick
1/4 cup sliced pickled jalapenos (can buy "nacho slices")
2 Tablespoons jalapeno pickling juice

Spread the onion over the bottom of a slow cooker. Sprinkle with salt. Continue with layers of potato slices, chicken thighs, cilantro then tomatillos - sprinkling salt gently over each layer as you build. Scatter jalapenos and juice over the top of all.

Cover and cook on high for 6 hours. Can be served with additional chopped cilantro over the top.
