3 cups chicken breasts, cooked and diced. Or I use 2 cans Costco chicken. broken up.
1 b fresh broccoli broken in chunks and steamed. Drain. Or you may use frozen broccoli, Just cook for half the time and drain
3 cups grated cheddar cheese, divided
2 tubes Ritz crackers ( Sounds like a lot, but you need it}
1 cube melted butter
1 T poppy seeds
SAUCE
1/3 cup butter, melted
1/4 cup cornstarch, dissolved in 1/2 cup cold water
1/3 cup chicken broth
salt and pepper
2 cups milk
1 1/2 cup of the cheddar cheese

You may use a 13x9 pan, or I usually use two smaller casserole dishes to make one and freeze one for later.Be sure to spray the pans with Pam. In a saucepan over medium heat, combine the melted butter, cornstarch dissolved in cold water, chicken broth and milk and seasonings. Stir well and continue stirring until sauce has thickened. Turn heat to low and and the 1 1/2 cups shredded cheese. Stir until melted.
Layer the broccoli and chicken in your pans, and pour sauce over evenly. Top with the other 1.1/2 cups shredded cheese.
Crush Ritz crackers in large zip lock bag with a rolling pin. Don't crush too fine. Add crumbs to the melted butter and sprinkle over the pans.

Bake uncovererd at 350 degrees for 30-45 minutes until sauce is bubbly and crumbs are deep brown.

If you are using two pans, wrap the second one well with plastic wrap and aluminum foil and freeze. Take out in the morning when you are ready to bake and let set out until you are ready to bake.

This sounds a little fattening with the cheese and butter, but once in a while won't be that bad for you! Enjoy!
