1/4 Cup extra-virgin Olive Oil
2 Onions Sliced
3 Cloves Garlic, peeled & sliced
1 Lg. bunch Kale, stemmed with leaves coarsely chopped
1/2 Cup Vegetable Stock, White wine or Water
Kosher Salt, Ground Pepper
Red Pepper Flakes to taste
2 Tbsp. Red-Wine Vinegar

Step 1: Heat Olive Oil in large sauce pan set over med-high heat. Carmalize the onion slices. Remove from pan & set aside. Cook garlic until soft.
Step 2: Add Kale to pan, turn heat to high & add liquid. Use spoon to toss the greens in the oi & liquid. then cover & cook for approximately 5 to 7 minutes, utill wilted, but still green. Add Onions. Remove cover and continue to cook stirring occasionally until all the liquid has evaporated, another 1 to 2 minutes. Season with Salt & Peppers. Add Vinegar. Toss to combine.
