1/2 lb. hamburger
3/4 c chopped onion
3/4 c shredded carrots
1 t. basil
1 t. parsley flakes
4 T butter
3 c chicken broth
4 c peeled and diced potatoes
1/4 c flour
2 cups (8 oz) American or Velveeta cheese
1½ c milk
3/4 t. salt
1/4-1/2 t. pepper

Directions:
Directions:
Brown hamburger. Drain.
In sauce pan, melt 1 T. butter. Saute carrots, onions, basil and parsley for 10 minutes in the butter.
Combine hamburger, potatoes, the sauteed mixture, and chicken broth. Bring to a boil. Reduce heat. Cover and simmer 10-12 minutes or until potatoes are tender.

Meanwhile, in small skillet, melt remaining butter. Add flour. Cook and stir until bubbly. Add to soup. Bring to a boil. Cook and stir for 2 minutes. Reduce heat to low. Add cheese, salt, pepper, and milk. Cook and stir until cheese melts. Serve
