3-4 lb. smoked ham hock
3-5 peeled potatoes, diced
5 c. fresh cut (or cans) green beans
4 sprigs summer savory (optional)
2 T. chopped parsley
1/4 t. pepper
Salt, optional
1 med onion, chopped
2-3 carrots, diced
1/2-1 cup half & half or light cream

Directions:
Directions:
Day before: Cook ham, covered with water, 3-4 hours, in large kettle until ham falls off bone at the touch of a fork. Debone ham. Cool liquid overnight.

To make soup:
Scrape fat off cooled ham liquid. Pour liquid in kettle. Add ham chunks, potatoes, carrots, green beans, onions, parsley, savory, and pepper. Bring to a boil. Reduce heat and simmer, covered, until vegetables are tender,stirring occasionally.

Stir in half & half (or light cream), just before serving. Heat, but don't boil.

Makes 3½-5 quarts.
