2 c. diced potatoes
1/2 c. sliced carrots
1/2 c. diced celery
1/2 c. chopped onion
1¼ t. salt
1/4 t. pepper
2 c. boiling water
1/4 c. butter
1/4 c. flour
2 c. milk
10 oz shredded cheddar cheese
1 can cream style corn

Directions:
Directions:
Simmer potatoes, carrots, celery, onion, salt and pepper in 2 cups boiling water for 10 minutes. Do not drain.
Make a white sauce with butter, flour and milk. Melt butter in sauce pan. Add flour. Heat and whisk together until a thick paste forms. Slowly add milk. Heat until thickened.

Stir corn into the veggie mixture and the cheese into the white sauce. Combine the two. Heat, if necessary, but do not boil.

Add crumbled bacon or diced ham if desired.
