24 oz. Pounded meat (chicken, veal, etc.)
Salt and pepper
2 Slightly beaten eggs
2 tbsp Heavy cream
1½ cups Panko
2 cup Grated parmesan cheese
2 tbsp Chopped parsley
Flour to coat each piece
¼ cup Olive oil
4 tbsp Butter
2 tbsp Oil
2 tbsp Minced shallots
½ cup Marsala wine
1 cup Chicken stock
1 lb. Sliced mushrooms

Directions:

Season the meat with salt and pepper. Mix eggs and cream in a bowl. Mix panko and parmesan in another bowl. Put flour in a third bowl. Dredge meat in flour, egg mixture, then panko. Heat oil and 2 tbsps of the butter in skillet and brown each piece. Place the meat on an oven-proof platter and keep warm in the oven while preparing the mushroom sauce.

Heat the butter and oil in the skillet. Add the shallots and cook for 2 minutes. Add the mushrooms and sprinkle with salt and pepper. Cook for 4-5 minutes. Pour in the wine and cook for about 3 minutes. Add stock and boil until liquid is halved in volume. Add the meat to the sauce and sprinkle with parsley.
