25 cups sliced apples
4 cups sugar
1 1/4 cup water
5 tbsp. lemon juice

Mix in small bowl
1 cup cornstarch
10 tbsp. sugar
4 tsp salt (optional)
5 tsp vanilla
15 tbsp. butter

Simmer the apples, sugar, water and lemon juice 7-8 minutes
Add the cornstarch mixture and simmer 2-3 minutes
Makes enough for 5 pies.

When the freezer in the fall is too full and no room for the sliced apples , I make this up and preserve in pint jars. This is also very good for apple crisp. Who doesn't like apple crisp!
