1 tinted canning jar, 8" tall
25 Madagascar Bourbon Vanilla Beans, whole
5-6 cups vodka

Clean and dry the jar, assuring it doesn't leak. Place the vanilla beans in the jar on-end.. You can slice a few of them open and scrape out the seeds, if you'd like to add them to the mix. Pour vodka (cheap vodka is fine) to cover the beans. Cover and set on a shelf in a dark cupboard/pantry. Give it a shake a few times each week.

You can use it as vanilla extract after 2 months. 6 months is better. 1 year is perfection. As you use the extract, just pour in more vodka. As you use the beans, just add a few more in. This will last for years and years. Can be given as gifts in small, dark jars.
