3 tbsp. cornstarch
1/4 cup sugar
1/8 tsp salt
1 tsp vanilla

For chocolate pudding, add 4 tbsp. cocoa or one square grated chocolate dissolved in the hot millk

Stir the cornstarch to a smooth paste in part of the milk, Heat remainder of milk in a double boiler. Add cornstarch, sugar and salt. Stir constantly until it thickens

At home we did not have a double boiler so a pot was used on medium having to be very careful not to let it burn. Stirring constantly was very important.
This recipe was tripled for our large family. Mom always used pure Watkins Vanilla so you may have to use more if using an artificial brand

Personal Note: This was Raymond's favorite pudding dessert.
It can be made into a chocolate pudding . I had to do this when I burnt the milk as I was distracted from the constant stirring. Maurice and Henry were hilling the potatoes with Mom in the garden and a few dirt lumps were being thrown at each other rather frequently. Mom was not happy with their behavior. Maurice came to the house to get a drink from the common water pail with Mom right on his heels. When she used the word damn, Maurice exclaimed "Stormy Weather" and proceeded to change the dial on Dad's barometer to stormy in front of her.. This action was absolutely forbidden as Dad was the only one who controlled that dial! Mom left the house with a schmurk on her face and I worried that we were all in deep trouble when Dad came in to check his barometer! I was so distracted that the milk got a little burnt so I added cocoa to hide the burnt taste! In all my life, that is the only time that I heard Mom say the word damn!!
