2½-3 lbs. Salmon fillets
¾ cup Sugar
¾ cup Light brown sugar
¾ cup Pickling salt
¼ cup Sambuca or Pernod
1 bunch Fresh Dill
1 bulb Fennel, thinly sliced
2 tbsp Toasted cracked white peppercorns
¼ cup Toasted fennel seeds

Directions:
Directions:
Remove pin bones from the salmon. Mix together all ingredients. Lay ½ of the filet in a container. Place mix on top. Place the other filet on top. Put a board on top of the salmon. Place a weight on top. Cure for 2-3 days marinating and turning every day.
