5 lbs.All Purpose Flour
3 sticks butter, unsalted
1/2 cup oil
14 tbsp. sugar
6-7 eggs
2 pkg. yeast
1 tsp. salt
1 qt. buttermilk
dash nutmeg
dash black pepper

Egg wash;
1 egg plus 1 yolk
1 tsp. sugar

Filling:
2 lbs, riccota cheese
2 eggs
sugar to taste
black pepper
nutmeg
cinnamon

Directions:
Directions:
Melt butter, then add sugar and eggs. Beat well. Add warm buttermilk. Mix. Add the rest of the igredients, except the flour. Mix well. Then add the flour. Mix, then knead until smooth. Don't over knead.Let raise until doubled.
Filling: Mix all ingredients and season to taste.Refrigerate.
bake in a preheated 350 degree oven for at least 20 minutes or until golden brow.
