Earl D'Amico's Gnocchi
2 pounds baking potatoes
1 cup sifted all purpose flour
1 whole egg
1 extra egg yolk
2 tablespoons butter, softened
1 teaspoon salt
grated parmesan cheese
red sauce
Boil potatoes in jackets till cooked. Peel potatoes and put thru ricer. While potatoes are still warm blend in the flour. Add egg, extra yolk, butter and salt. Place on floured board and knead lightly. Keep dough soft. Role into rods about 1" thick and cut into 3/4 inch pieces. Dent each piece in the middle with a fork. Flour them and keep them separated.
To cook:
Place in boiling water with salt in it. Cook until they rise to the top. Drain and place in a heated bowl. Sprinkle cheese and sauce over them. Serve immediately.
