1 Tbsp ground flax seeds
2½ Tbsp water
1½ C flour
1 tsp baking soda
1 tsp cinnamon
1 C non-dairy butter
¼ C oil
¾ C firmly packed brown sugar
½ C sugar
1 tsp vanilla
3 C oatmeal - uncooked
1 C raisins
1 C chopped walnuts

1. Preheat oven to 375ºF
2. Make flax egg - mix ground flax seed with water and set aside for at least 5 minutes to solidify
3. In a medium bowl, whisk flour, baking soda, and cinnamon and set aside
4. Using a mixer, beat together butter, oil and sugars until light and fluffy
5. Beat in flax egg and vanilla
6. Add flour mixture to the batter and mix until fully combined
7. Stir in oats, raisins and walnuts
8. Drop rounded teaspoonfuls on an ungreased cookie sheet or Silpat
10. Bake 8-9 minutes for chewy cookies, 10-12 minutes for crispy cookies
11. Let cool 1 minute and remove to wire wrack
12. Store in airtight container
