12 cups divided whole wheat flour.
1/2 cup gluten flour
4 cups hot, hot water

Combine 6 cups ww flour and gluten. While the mixer is running, pour the water in. Mix for 1 minutes. Cover and rest for 10 minutes.

Add 1/3 cup Crisco oil
1/3 honey
2 Tblsp salt

Add these to the dough. Quickly add more whole wheat flour until the sides of the mixer bowl are clean. Then 1/2 cup more.

Knead dough for 7 to 10 minutes. Preheat oven to 150. Divide dough into three equal loaves. Bake for 15 minutes. Then bump up temp to 350 degrees for 30 minutes.

When it's out of the oven, let cool on a rack with it lightly covered with plastic bag. Helps the crust to soften. If bag starts to "sweat", reverse bag.
