1 cup mayonnaise
4 green onions (scallions) minced
1 loaf ciabatta bread, approx. 12-14 inches long, 6 inches wide
1 jar or can of cranberry sauce, whole or jellied
¾ - 1 pound sliced roasted turkey
¼ pound sliced cheddar cheese
3 cups arugula
Leftover turkey stuffing, if desired

In a small bowl, stir together the mayonnaise and green onions, mixing well. Cut the ciabatta in half horizontally, and spread one side with the mayonnaise mixture and the other side with the cranberry sauce. Layer the bottom half of the bread with turkey and cheese slices, then the arugula. Can spread the top half with leftover stuffing if desired. Top the sandwich with the top half of the ciabatta loaf. Wrap tightly with plastic wrap and refrigerate for 1-4 hours to let the flavors mingle. To serve, place on a cutting board and cut the loaf into 2 inch wide slices.
