2 egg whites
1/4 c. sugar
2 egg yolks
3 c. milk
1/3 c. quick cooking tapioca
1/3 c. sugar
1/4 t. salt
1 t. vanilla

Directions:
Directions:
Beat egg whites until frothy. Add sugar gradually and beat until rounded peaks are formed. Set aside. Put slightly beaten egg yolks in a saucepan; gradually stir in milk. Add tapioca, sugar and salt and bring to a boil, stirring constantly. Do not over cook. Remove from heat and blend a small amount of the hot mixture into the egg whites. Quickly add the remaining tapioca mixture with 1 t. vanilla, leaving some of the egg whites floating in the mixture. Chill.
