1 1/2 c. persimmon pulp
1 c. sugar
1 c. flour
2 t. baking powder
1 egg
1 c. milk
shortening

Directions:
Directions:
Beat ingredients well and pour into pan greased with 3 T. shortening. Batter will be thin, but will rise, then fall to make pudding. No spices -- just persimmon flavor.
 

Lemon Sauce


Ingredients:

1/2 c. sugar
2 T. cornstarch
1/3 c. lemon juice
1 1/4 c. water
1/2 t. grated lemon rind
pinch of salt
1/4 c. butter

Directions:
Directions:
Combine sugar and cornstarch in a saucepan. Stir in lemon juice, water, lemon rind and a pinch of salt. Cook over medium heat stirring constantly until thick and clear. Remove from heat and add butter. Grandma Cassel substituted lemon drops for the juice.
