Persimmon Pudding


Ingredients:

1 c. brown sugar
1 c. water
2 T. butter
1 c. persimmon pulp
1 c. sugar
1 1/3 c. flour
2 t. baking powder
1/2 c. milk
1/4 t. salt

Directions:
Directions:
Mix brown sugar, water and butter and bring to a boil. Pour into a 6" x 10" x 2" baking dish. Mix remaining ingredients and beat well. Drop by spoonfuls on top of sauce. Bake 50 minutes at 350. Cool and top with lemon sauce.
 

Lemon Sauce


Ingredients:

1/2 c. sugar
1/3 t.salt
1 T. cornstarch
2 T. butter
1 c. boiling water
1 T. grated lemon rind
2 T. lemon juice

Directions:
Directions:
Mix sugar, salt and cornstarch in a sauce pan. Gradually stir in hot water. Bring to boiling. Cook 15 minutes, stirring until smooth. Add lemon rind, juice and butter.
