1 pound 93% lean ground beef
1 pkg taco seasoning
1/3 cup water
1 Tbsp canola oil
2 1/2 cups bell pepper, diced
1 1/2 cup onion, diced
1 tsp onion powder
1/4 tsp salt
1/8 tsp pepper
1 can corn, drained
1/2 cup salsa
1 small package corn muffing mix, prepared as directed on package
1 1/2 cup reduced fat shredded cheese
6 Tbsp sour cream
6 Tbsp gaucamole

Directions:
Directions:
Preheat oven to 400º.
Brown ground beef over medium-high heat until cooked, stirring to crumble. Drain, add taco seasoning and water; mix until well combined.
Meanwhile, heat oil in another skillet. Add peppers and onions, cook until tender. Remove from heat and drain excess liquid.
Add garlic and onion powders, salt, pepper, corn and salsa. Stir well and set aside.
Prepare cornbread mix.
Spray a 9 X 13 -inch casserole dish with cooking spray.
Combine salsa and corn mixture with ground beef and mix well. Spread half of mixture in the bottom of the pan, pat down. Sprinkle cheese over meat mixture and top with remaining meat mixture.
Top with cornbread batter.
Bake for 20 minutes or until cornbread is done.
Let stand 5 minutes before serving.
Garnish with sour cream and guacamole.
