Pumpkin Cake Recipe

4 eggs-room temperature
2 c sifted flour
2 tsp baking soda
2 tsp pumpkin pie spice
2 c sugar
1 c oil
1 can pumpkin (1#)

Frosting:
3 oz. cream cheese, softened
¼ c butter
2 c powdered sugar
½ tsp vanilla

Directions:
Preheat oven to 350º.

Sift flour, baking soda, salt and spices.

Beat eggs with sugar @ high speed until light and fluffy. Beat in oil and pumpkin. Blend well.

At low speed, add flour mixture until just combined.

Pour into ungreased 9 inch tube pan.

Bake for 1 hour or until surface sprigs back when gently pressed.

Cool cake completely in pan. Carefully loosen cake from pan.

Frost with cream cheese frosting.
