1 and ½ cups all-purpose flour
1 cup rolled oats
2 and ½ teaspoons baking powder
½ teaspoon salt
1 cup milk
1 egg
¼ cup vegetable oil
3 tablespoons molasses
½ cup shredded zucchini
¼ cup chopped nuts, optional

Directions:

Pre-heat oven to 425 degrees.
Grate washed, unpeeled zucchini with coarsest side of grater. (or chop coarsely in food processor.) Set aside.

In a large bowl, mix together the dry ingredients. Make a well in center of dry ingredients and add the milk, egg, oil and molasses. Mix just until dry ingredients are incorporated. Gently stir in the zucchini and nuts.

Fill 12 well-greased muffin cups in tin 2/3 full. Bake in 425 degree oven for 15 minutes or until done. Test with toothpick.
