1 to 2 pounds ground beef
3 cups enchilada sauce
3 cups shredded cheddar or jack cheese
2 cups sour cream
1 cup chopped green onions
½ teaspoon cumin
6 to 8 corn tortillas

Directions:
Directions:
Brown beef, season as desired, and let cool. Heat enchilada sauce. Add 2 cups of cheese to the sour cream, the onions and cumin. Mix in meat. Heat oven to 375°F. Dip tortillas in hot oil for 2 to 3 minutes on each side. Pour 1 cup of sauce into a 9 by 13-inch pan. Overlap tortillas in sauce. Spread a couple of spoons of beef and sour cream filling down the center of each tortilla. Fold sides over and lay seam side down. (Do one at a time.) Pour remaining sauce over folded tortillas and sprinkle with remaining cheese. Bake for 20 minutes.
