1/3 cup soy sauce
1/3 cup packed brown sugar
2 tsp lime zest
1/4 cup lime juice
3 garlic cloves
1 1/2 pound boneless skinless chicken breast cut into 1 inch pieces
1/3 cup creamy peanut butter
1 Tbsp fresh parsley

Directions:
Directions:
In a large bowl combine soy sauce, brown sugar, lime zest and juice. Add garlic cloves (pressed or minced) into soy mixture.

Set aside 1/3 cup soy mixture for peanut dipping sauce.

Add chicken to remaining soy mixture, mix thoroughly, cover and marinate for 30 minutes.

Preheat oven to 400. Place marinated chicken in oven safe dish and back for 18 - 20 minutes or until chicken is no longer pink in center.

Prepare peanut sauce by adding peanut butter and cilantro to reserved 1/3 cup of soy mixture. Whisk until smooth and serve with chicken.
