4 skinless chicken breasts or 6 skinless thighs- cut into cubes
olive oil
4 garlic cloves
1 onion diced
1 (16 ounces) can chicken broth ( I use Traders)
4 cans white chili beans- rinse them in colander
2 small cans mild Ortega diced green chilis
bunch of fresh Cilantro to taste
Carroll Shelbys White Chicken chili kit
Use seasonings in White chili package or cumin, chili powder, salt& pepper
cheese- either cheddar or pepper jack
sour cream
avocado slices

Directions:
Directions:
Heat 1 TBLS of olive oil- add garlic cloves and onions and caramelize
then add the cut up chicken and cook until meat isn't pink, Add chicken broth, beans, chilis,and cilantro and seasonings. Cook on low heat and simmer for about 45 minutes.

When serving garnish with sour cream and more fresh cilantro and cheese
