˝ lb. pork bacon, chopped
˝c. onion, chopped
3 garlic cloves, minced
1 tbsp. fresh ginger, chopped
1 tsp. salt
1 tbsp. sugar
1 tbsp. cider vinegar
1 pkg fresh collard greens, washed, trimmed, and coarsely chopped

Directions:
Directions:
In a large skillet or wok, sauté bacon over medium hear until done, but not crispy. Add next 3 ingredients and sauté 1 minute. Stir in greens, sugar and vinegar, sauté 3 minutes. Cover and cook until greens are wilted and done to taste.
