Ingredients:  
Ingredients:  
3 slices of bacon cooked til crisp, crumble and set aside
2 T. of bacon drippings
½ c. diced onion
½ c. chopped fresh mushrooms
1 can of chicken broth
½ tsp paprika
salt and pepper to taste.
2 c. leftover mashed potatoes
½ c. grated cheddar cheese
2 finely chopped scallions
2 T. sour cream
2 T. half & half or cream

Directions:
Directions:
Add bacon drippings to a large soup pot (I used 1 T. butter & 1 T. drippings). Saute onion and mushrooms until tender and golden.
Add chicken broth, paprika
Add salt and pepper to taste.
Blend in mashed potatoes and whisk or stir until smooth.
Bring soup to a simmer, lower heat, add grated cheddar cheese and stir until melted.
Mix in scallions, the crumbled bacon, sour cream and half & half or cream. Heat through but do not boil.

If soup is too thick for your taste add additional chicken broth.
