1/2 c. shortening
1 1/2 c. sugar
2 eggs
2 oz. red food coloring
2 T cocoa
2 1/2 c. flour
1 tsp. salt
1 c. buttermilk
1 tsp. vinegar
1 tsp. baking soda
1 tsp. vanilla

Directions:
Directions:
Cream shortening, eggs, and sugar together until light and fluffy. Make a paste of cocoa and food coloring, add to shortening mixture. Add alternative the flour and salt and the buttermilk to the creamed mixture. Add vanilla. Mix vinegar and soda and blend in mixture at slow speed on mixer. Pour into three 8" well-greased and floured layer cake pans. Bake at 325 degrees for 30 minutes or until done. Cool the cakes.

Use MOCK WHIPPED CREAM FROSTING
