Pork Loin (either entire loin, which you will cut into 20 - 30 pieces or precut pork loin)
2 cups flour
3 eggs
1/4 cup milk
3 cups bread crumbs
Seasoning Salt
Pepper
Oil

Directions:
Directions:
Pound pork loin pieces between to sheets of saran wrap with meat mallet to about 1/4 inch thickness

Breading Station:
3 separate containers, 1 for the flour mixture, 1 for the egg wash and 1 for the bread crumbs.
Flour is seasoned with seasoning salt and pepper (just enough to give the flour a nice flavour)
For egg wash mix eggs with milk and beat until blended

Dredge pork slices through the flour coating both sides, shake off excess. Dip coated pork in egg wash ensuring entire piece is covered, then place in bread crumb container and press to cover both sides.

In a large pan or skillet heat up oil. When hot add pork in batches. Cook until golden brown on each side, (about 2 minutes)

remove from oil place on cookie sheet and place in oven to keep warm, until ready to serve (set oven at 300)

Serve with lemon wedges.
