Ingredients: Gulab Jamuns 2 cups powdered milk 2 tbsp. all purpose flour 2 tbsp. butter or ghee 1 tsp. baking powder 1 tsp. ground cardamom ½ tsp. ground nutmeg pinch of saffron 3 tbsp. sooji or semolina soaked in 3 tbsp. evaporated milk ½ cup evaporated milk
Syrup 3 cups water 2 cups sugar ½ tsp. of coarsely chopped cardamom Pinch of saffron pinch of yellow or orange colour 2 or 3 drops of lemon juice to avoid crystallization of the sugar slivered pistachios and saffron for garnishing

Directions:1. Soak the semolina in evaporated milk for about 15 minutes. 2 In a large bowl, add powdered milk, butter, flour, baking powder and semolina and start kneading. 3. Add in cardamom and nutmeg and mix the ingredients. 4. Slowly start adding the evaporated milk a tbsp. at a time until the dough comes together. 5. Divide the dough into equal portions and using your palms make them into round balls. 6. If there are cracks in the balls then the dough is too tight. Add a little evaporated milk and keep kneading until the dough is soft and manageable. 7. Let the dough rest for about 15 minutes. 7. In a saucepan prepare the syrup by adding all the ingredients under syrup and let it boil for about 15 minutes until the syrup is about 1 string consistency. Keep the syrup on the side 8. Fry the gulab jamun balls on medium low heat until they are golden brown turning them continuously. 9. Remove from the heat and place the balls on a paper towel on a plate. 10. Add the Gulab Jamuns in warm syrup and let them soak for about 1 hour before serving. 11 Garnish with pistachios and saffron.. |
