4-5 firm ripe tomatoes
½ cup chopped fresh basil leaves, or a ½ cup chopped cilantro, (your preference)
3 TBSP olive oil
2 garlic cloves, finely chopped
1 shallot chopped fine
salt and pepper
Nantucket Bread, or slices of crusty baguette or other country style bread

Directions:
Dice tomatoes into small cubes and transfer to a small bowl. Add chopped basil or chopped cilantro and add shallots salt and pepper. Place olive oil and garlic in a small microwave-safe bowl. Microwave on high 30 seconds or until garlic begins to sizzle. Toast bread slices, or Nantucket bread in toaster oven, or oven until lightly browned. Brush toast with garlic oil. Evenly divide tomato mixture over slices.

This is a great late summer appetizer. Best when tomatoes are ripe and abundant in your garden. Recipe calls for 6 basil leaves, but you can use much more if you like. And if you have it, it tastes BEST on Nantucket Toast!
