* 32 Oreo cookies, (16 regular & 16 mint filled)
* 1/2 cup butter, melted
* 2 - 7oz containers marshmallow crème (2 heaping cups)
* 1/3 cup creme de menthe liqueur
* a few drops of green food coloring
* 1 tsp vanilla extract
* 1 pint whipping cream
* 1/4 cup chopped Andes Mints

Directions:
Directions:
Crush cookies into crumbs and set 1/4 cup aside for topping. Place remaining crumbs into a medium bowl and mix in melted butter. Press crumb mixture into bottom and sides of a 9 inch springform pan.
In a large mixing bowl, whip together marshmallow crème, crème de menthe, green food coloring until smooth. In a separate bowl whip the cream and vanilla until soft peaks form, then fold into marshmallow mixture. Pour mixture onto cookie crust in pan and sprinkle with reserved cookie crumbs and Andes mints. Freeze at least 3 hours, until firm. Remove from freezer 20 minutes before serving to soften slightly. Makes 8 servings.
