2 C mashed sweet potato ( 29oz can)
3 TBLS Brandy
¼ C butter, softened
1 TBLS sugar
dash nutmeg & cayenne if desired
½ teas salt
1 teas grated lemon rind
4 egg yolks
4 egg whites

Directions:
Directions:
Beat potatoes, brandy & butter until blended. Beat in ingredients thru lemon rind. Beat yolks until lemon colored--fold in above mixture; then gently fold in stiffly beaten egg whites.

Butter a 2 quart dish

Bake 400ºF for 30-35 min
