Thousand Island Dressing

Pastry:
¼ c. shortening
3 oz. cream cheese
1 c. flour
1 tsp. caraway seeds
½ tsp. salt
3 T. water

Stuffing:
3 oz. left over corned beef, finely chopped or good quality canned corned beef
1 c. shredded Swiss cheese
½ c. sauerkraut, well drained

Dressing: (see recipe below)
¼ c. Thousand Island Dressing

Directions:
Directions:
Preheat oven to 450º.
Combine crust ingredients, divide in half. Roll each half to about an 8 x 10 inch rectangle.
Combine stuffing ingredients and divide in half.
Spread each half of the rolled out dough with 2 T. dressing and top with half the stuffing mixture; carefully spread out mixture leaving ¼ edge. Fold in ends and roll up beginning at the long side; pinch edges to seal.
Bake on ungreased (or parchment lined) cookie sheet until brown, 15 to 20 minutes.
Cut each roll into 4 pieces. Serve with extra dressing on the side if desired.
 

Thousand Island Dressing

1/2 c. mayonnaise
2 T. ketchup
1 T. white vinegar
2 tsp. sugar
t pickle relish
1 tsp. minced white onion
1/8 tsp salt

Directions:
Directions:
Combine all ingredients in a small bowl and stir well. Cover and refrigerate for several hours, stirring occasionally to blend flavors.

You can make these ahead but do not bake and refrigerate until ready to serve; then just pop them in the oven for hot appetizer.
