CAKE:

1 box French Vanilla Cake Mix

6oz white baking chocolate

2/3 c water

1/3 c oil

5 eggs (3 whole, 2 whites)

Almond Custard Filling:

1-5.1 oz white chocolate instant pudding (Ghiradelli makes a vanilla bean one that is excellent in this recipe)

1 c milk

1/2 c whipping cream

1-tsp almond extract

1 tbls honey

White Chocolate Whipped Frosting:

2 pkgs cream cheese (room temp)

1 c sugar

2 tsp almond extract

4 c heavy whipping cream

6 oz white baking chocolate (finely chopped)

DIRECTIONS: Melt the baking chocolate using a double boiler and set aside to cool. Mix the cake ingredients on low speed for 30 seconds or until well blended. Add in cooled melted white chocolate. Mix an additional 2 minutes on medium speed. Pour cake batter into prepared cake pans. Bake at 350 degrees for 20-25 minutes or until wooden toothpick comes out clean. (If doubling recipe, increase bake time). Remove from oven and let cool on baking rack.

Custard Directions: Using mixer, beat all ingredients on low speed for 30 seconds, then on high for approximately 2 minutes.

White Chocolate Whipped Frosting Directions: Using a double boiler, heat 1 cup heavy cream and add in finely chopped white chocolate. Stir until melted. Set aside to cool. Using a chilled bowl, mix cream cheese, sugar, and almond extract, mixing on low speed. Add melted cream and white chocolate mixture slowly until well blended. Turn mixer onto high speed and slowly add 4 cups heavy whipping cream. Beat until stiff peaks form.

Assemble: Place 1 - 9" cooled cake upside down on a plate. Top with custard. Add remaining cake and frost. Optional: Garnish with fruit (Strawberries or other berries, I've even used Strawberry and Kiwi) and shaved white chocolate.

Freeze well.
