6 to 8 medium beets
Olive or Canola Oil
1/3 C. bleu cheese, crumbled
Pistachio nuts, chopped lightly
1 small container arugula
Salt and pepper, to taste

Directions:
Directions:
1. Stem and wash beets. Rub with Oil and sprinkle with salt and pepper.
2. Wrap beets in aluminum foil and bake at 350 for 1 1/2 hours.
3. Bring out of the oven when finished and let cool. Peel once cooled.
4. Slice or chunk beets.
5. In a bowl, mix nuts, cheese and beets.
6. Mix in with arugula and serve.
