2 Tbsp. melted butter, 1/2 c. melted butter
1 med. chopped onion
1/2 c flour
4 c. milk
4 c. chicken stock
1 lb. fresh broccoli, 2 c. carrots (cut up)
1/2 tsp. nutmeg
16 oz. sharp cheddar cheese

Directions:
Directions:
1. Saute onion in butter, set aside.
2. Cook melted butter & flour using whisk over med. heat 3-5 mins. Stir constantly & add milk.
3. Add the chicken stock, simmer for 20 mins.
4. Add broccoli, carrots, & onions. Cook low 20-25 mins.
5. Add salt/pepper, nutmeg.

Can be pureed in blender. Return to heat and add cheese.
