5 c. chicken stock, heated
4 T. butter
1 T. olive oil
˝ c. onion, chopped
2 c. arborio rice
˝ c. grated Parmesan cheese
salt & pepper
red pepper flakes (optional)

Directions:
Directions:
Sauté onion in 2 T. butter and 1 T. olive oil. Add rice and cook until grains glisten stirring constantly. Stir in ˝ c. of hot stock and cook at medium heat until stock is absorbed. Continue adding stock ˝ c. at a time letting the stock absorb each time until the rice is tender but firm and consistency is creamy. Stir in remaining butter and cheese. Add salt and pepper to taste.
