4 oranges, peeled, sliced, seeded, drained (reserve juice)
1 cucumber, unpared thinly sliced
6 cups torn spinach leaves
2 heads Bibb lettuce, torn
1 small red onion, sliced and separated into rings
½ cup coarsely, chopped, toasted walnuts
½ cup vegetable oil
¼ cup orange juice
2 Tbsp. cider vinegar
1½ tsp. sugar
¼ tsp. salt
⅛ tsp. ground black pepper

Directions:
Directions:
Arrange several orange and cucumber slices alternately around side of chilled, large, glass salad bowl. Arrange spinach, Bibb lettuce, remaining orange and cucumber slices, the onion rings, and walnuts in layers in bowl.

Measure remaining ingredients into jar with tight fitting lid; cover and shake. Chill.

Just before serving, pour dressing over salad and toss.

Makes 10 servings.
