Pork Chops

¾ cup marsala
1½ Tbsp. grated orange peel
¼ cup orange juice
1 clove garlic - crushed
1 tsp. salt
½ tsp. dried rosemary
Dash of each: ground cloves, cinnamon, and pepper
6 loin pork chops - 1" thick
2 Tbsp. olive oil

Combine all marinade ingredients. Wipe pork chops with damp paper towels. Trim off fat. Place shops in shallow dish - pour marinade over all. Let stand 1 hour, turning chops at least once. Drain chops - reserve. In hot oil in Dutch oven, brown chops well on both sides - about 15 minutes. Pour reserved marinade over chops. Simmer, covered 40-50 minutes - until tender.

Arrange pork chops on serving platter. Garnish with glazed orange slices - keep warm. Heat drippings in Dutch oven until boiling. Boil 1 minute. Strain and pour over pork chops.

Makes 6 servings.
 

Glazed Orange Slices

3 medium oranges
1/4 cup butter
1/2 cup brown sugar, packed
2 Tbsp. light corn syrup

Trim and discard ends from oranges. Cut unpeeled oranges crosswise into slices about 1/2 inch thick. In large skillet, combine butter, sugar, and corn syrup. Cook over medium heat, stirring until sugar is melted and mixture boils. Layer oranges in skillet. Cook, uncovered 5 minutes. Turn slices and cook 5 minutes longer or just until orange slices are shiny and glazed.
