6 hard cooked eggs
6 flat anchovies - drained and chopped
3 Tbsp. mayonnaise
2 tsp. lemon juice
pepper
2 Tbsp. minced parsley
1 pimento - drained
bottled capers - drained

Directions:
Directions:
Cut eggs in half - lengthwise. Remove yolks to small bowl. Add anchovies, mayonnaise, lemon juice, pepper, and parsley. Mix well with fork. Stuff egg whites with yolk mixture. Cut pimento into 24 strips 1" long. Arrange 2 strips criss-cross on each egg half. Garnish with 2 capers - one on each end.
