Chicken Sausage and Pasta Recipe

1 pkg chicken sausage-Savory Smoked BBQ or any other favorite
1 cup sliced mushrooms
1 onion or 3 shallots
1 roasted red pepper
1 delicata squash (you could use butter nut)
1/2 to 1 c chicken broth
1/3 cup butter
dried basil
salt and pepper to taste
Olive oil or avocado oil
cooked pasta, I used penne, gluten free

Directions:
Directions:
Cut and take out seeds from the red pepper. Rub both sides with olive oil and broil in the oven until the skin turns black. Cool and remove the skin from the pepper. Slice into strips and set aside.
Peel squash and cut into bit sized pieces. Wash and slice mushrooms. Slice onion. Set these aside.
Put 1-2 tbsps. of oil into large fry pan or wok. Saute the onions and mushrooms. Add the squash and 1/2 cup of chicken broth. Cover and simmer until the squash is tender. Ten minutes maybe.

Cut up the sausage and set aside. Cook the pasta in a separate pan, drain it.

Add the butter to the vegetables in the fry pan. Add the sausage, pasta and red pepper. Heat through. Add a pinch of basil, salt and pepper.

I made up this recipe so the measurements and times are a guess. Change it as you will. It's a good combination and a nice fall meal.
