8 slices zwieback, crushed
1½ cups finely chopped walnuts
1½ cups finely chopped almonds
grated rind of 1 orange
6 eggs, divided
1¾ cup sugar, divided
½ tsp. vanilla
2 cups water
1 inch piece of cinnamon stick
1 slice of lemon
¼ cup light rum

Directions:
Preheat oven to 350 degrees. Grease and flour 9x13 inch pan.

Combine zwieback, walnuts, almonds, and orange rind in a large bowl. In another bowl beat 6 egg yolks with ¾ cup sugar and vanilla. Beat 6 egg whites until stiff. Gently fold egg whites into egg yolk mixture and then gently fold the egg mixture into the nut mixture. Pour into prepared pan and bake for 45 minutes.

While cake is baking, dissolve 1 cup sugar in 2 cups of water. Add cinnamon stick piece and slice of lemon. Simmer 5 minutes. Remove from heat and add rum. Keep warm.

Remove cake from oven when cake bounces back when pressed. Immediately pour the hot syrup over the whole cake. Dip a sharp knife into hot water and cut the cake into elongated diamond-shaped pieces.

Makes 12 servings.
