6 scallions
1 heaping tablespoon fresh tarragon leaves
salt and freshly ground black pepper
1 tsp. dry mustard
olive oil
lemon juice
leaf lettuce or oak leaf lettuce

Directions:
Directions:
Cut the scallions very fine and chop the tarragon. Blend with salt and pepper to taste. Add mustard. Add ½ cup olive oil and 1 tsp lemon juice. Blend and let stand for one hour to mellow. Add more oil and lemon juice (to taste), and toss with the washed and dried greens at the last minute.

Makes 8-10 servings.
